Uyghur Hot Pot vs Sichuan Hot Pot: What’s Different?

Same bubbling pot, different soul. Where the two traditions part ways, and why ours tastes like cumin.

What is the difference between Uyghur and Sichuan hot pot?

Sichuan hot pot is built around mala, the numbing heat of Sichuan peppercorn and chili. Uyghur hot pot keeps the chili but leads with cumin, lamb and halal tradition. Both put a shared pot at the centre of the table; what simmers in it, and what you dip into it, is where they part ways.

Four differences you can taste

  • The spice lead. Sichuan opens with peppercorn numbness. The Uyghur signature, our cumin mala base, opens warm and earthy, with the chili arriving second.
  • The meat. Sichuan hot pot is famously pork-friendly, from the broth down. The Uyghur table is lamb and beef, never pork, which is why a genuinely halal hot pot comes naturally to this kitchen.
  • The fat. Classic Sichuan mala rides on beef tallow, and so does ours, halal tallow in the spicy beef tallow base.
  • The sides. Uyghur tables lean on hand-pulled noodles and bread; that DNA shows in how seriously the noodle end of our self-serve bar is taken.

Think of it as the same fire tended by two different traditions. One numbs. The other warms.

Try both sides of the argument

A divided pot at Otluk lets you run the cumin mala against the straight mala chili oil and taste the difference in one dinner. The broth guide explains all six bases; the menu, with AYCE from $34.99, is at otlukhotpot.ca/menu. North York, seven days, 1:00 PM to midnight.

Frequently asked questions

Is Uyghur hot pot spicy?

It can be. The cumin mala and mala chili oil bases bring real heat, but cumin leads before chili. Mild bases like mushroom and tomato are always available.

Does Sichuan hot pot contain pork?

Often, in both the broth and the trays. Uyghur hot pot never does: the tradition is lamb and beef, cooked halal.

Can I try both styles at Otluk?

A divided pot lets you run the Uyghur cumin mala beside the straight mala chili oil base in the same dinner.
